Cranberry Pearsauce, Cranberry Almond Bread, and Cranberry Banana Bread Recipes

Like most people, I absolutely LOVE applesauce, and to me, there is nothing more enjoyable than homemade applesauce. After teaching myself a recipe that I was comfortable with and loved, I decided to play around a little with it last year for Thanksgiving. I first started by substituting the apples for pears, making it pearsauce. And it was a hit! But I wanted to incorporate Thanksgiving’s little tart dessert flower, the cranberry. So, that’s basically how this recipe came about. Cranberry Pearsauce. I hope you enjoy it as much as my family does!

Cranberry Pearsauce

  • 10 pears, peeled, cored, and chopped
  • 1-3/4 cups water
  • 1/2 cup white sugar
  • 1-1/4 teaspoons ground cinnamon
  • 2 teaspoons fresh lemon juice
  • 2 cups fresh or frozen cranberries

In a pot or large saucepan, combine water, sugar, lemon juice and cinnamon. Add pears and bring to a boil over medium heat. Stir in cranberries. Reduce heat; cover and simmer for 15 minutes or until tender, stirring occasionally. Allow to cool, then mash with a fork or potato masher. You can leave a few lumps and bumps to make it chunky, or puree in a blender for a smoother treat.

Cranberry Almond Bread

  • 2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup butter, melted
  • 2 teaspoons almond extract
  • 1 6-ounce package Dried Cranberries
  • 1 tablespoon sugar
  • 1/4 cup sliced almonds

Preheat oven to 375ºF. Grease a loaf pan.

Combine flour, sugar, baking powder and salt in a medium mixing bowl. Set aside. Combine egg, milk, butter, almond extract and dried cranberries in a medium mixing bowl. Add to dry ingredients; mixing just until the dry ingredients are moist. Spread batter in loaf pan. Sprinkle with sugar and almonds. Bake for 1 hour or until a knife or toothpick inserted into center of loaf comes out clean. Remove from pan and cool.

Cranberry Banana Bread

  • 1 cup sugar
  • 1/2 cup butter or margarine, softened
  • 1 cup mashed banana
  • 1/4 cup milk
  • 2 eggs
  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 cup walnuts, chopped
  • 1 6-ounce package Dried Cranberries

Preheat oven to 350ºF. Grease a loaf pan.

Mix sugar and butter together in a medium mixing bowl until completely blended. Add banana, milk and eggs, mixing well. Add dry ingredients, mixing just until moist. Stir in nuts and dried cranberries. Spread batter evenly in a loaf pan.

Bake for 1 hour or until a toothpick inserted into the center of the bread comes out clean. Remove from pan and cool.
