Now I’m going to tell you this is one of the very best coconut meringue pies I’ve ever tasted and I am not much of a meringue lover at all, but this is a delicious pie that will have even those who may not think they like it, thinking about a second piece. However, when Granny makes this pie recipe it never stays around long enough for second pieces. So if you love coconut pies and you love meringue pie recipes, well you need to get out your utensils and ingredients and start whooping up your own delicious pie by making Granny’s coconut meringue pie recipe.
Coconut Pie Ingredients
- 2/3 - cup white sugar
- 1 ½ - milk
- 3 - eggs
- 2 - Tablespoons flour
- ½ - Tablespoon vanilla extract
- ½ - stick of butter or margarine
- 1 - can of coconut
Mix the sugar, eggs and flour together thoroughly and then add the milk and mix well. Using a double broiler you will cook this at medium heat until it becomes thick. You will then add the vanilla, the butter or margarine and the coconut and allow to cook over a low heat setting.
Meringue Ingredients
- 3 - egg whites
- ¼ - teaspoon vanilla extract
- 6 - Tablespoons white sugar
Beat the egg whites until stiff and then add the vanilla and sugar and beat well until fluffy and stiff. You will take about a tablespoon of this meringue mixture and add it to the coconut pie mixture and mix well.
You will then pour the pie mixture very carefully into a 9-inch pie crust and smooth it out. Next you will add the meringue mixture to the top of the pie and smooth it out nicely. Since the coconut mixture is already cooked you will simply place the whole pie in an oven on a low broiling setting and brown the meringue.
