An easy, economical and delicious meal.
Your friends will think you are a gourmet chef, you will impress even the pickiest palette, and everyone will want to know how to make it.
Serves four to six people:
Prep Time: 10 minutes
Cook Time: 40 minutes
Ingredients:
- one medium to large flank steak
- one container of ricotta cheese
- about 1 cup mushrooms
- one large onion
- asparagus (you’ll want about 20 stalks)
- artichoke hearts (if you like) these are great, already sautéed from the grocery store in a jar
- one half stick butter
- one whole clove garlic
Directions:
- heat oven to 350
- lay out flank steak and cut in half, you will want the pieces to be about 8 inches wide, (wider is okay) and about 10 inches long. Once cut put on a sheet of tinfoil that will completely cover the flank steak when stuffed.
- you then want to coat the flank steak evenly with ricotta cheese. You will want the cheese to be about a quarter inch thick. In my opinion, the more cheese, the better. If you want to use more go right ahead.
- in a separate skillet, cooking over medium heat, you will want to cook the mushrooms, onions, asparagus, artichoke hearts in butter and garlic. Cook down until asparagus is soft. (Let cool for a little while)
- take your cooked ingredients and spread over top of ricotta cheese.
- because the flank steak is on the tinfoil already pushed the ends in to nothing and come out and roll up the sides tightly, So that it now resembles a taco. Do that to both flank steaks, put on a flat pan and bake.
- when fully cooked, flank steak will still have a slight pink tint.
Tips:
if you don’t have ricotta cheese, you can use cottage cheese. you can also substitute other vegetables in place of asparagus.

This meal goes great with mashed potatoes or with any side dish, but is just as good by itself.
This is a great meal to have when company comes over, and a great meal. Just for your family.

- stuffed flank steak is quick and easy to make. Due to this it allows you time to do other things to prepare for your get-together or to just sit and visit. And as it is cooking the aroma is mouthwatering.
