Holiday cookie recipes would not be complete at all without Granny’s Huge Chocolate Chip Cookie Recipe. And this one comes with a variation of making your own homemade huge peanut butter cookies. These cookies are a real treat for anyone who loves cookies and they are very popular with the kids. This is a large recipe that will make about 3 or 4 dozen cookies depending on the amount of dough you choose to use. This chocolate chip cookie recipe or the variation as peanut butter cookie recipe can be covered and sealed and placed in the refrigerator for at least another day, if you find yourself overwhelmed with the amount of cookie dough this recipe will make. Of course, you could always make it into rolls and then freeze any cookie dough that you are not able to use and make in a day’s time.
These cookies make great gift ideas as well. You can make these up and pack a dozen in a box to give as gifts to those on your gift giving list. However, be aware that if you make these cookies for more than one year in a row for gift giving and then you do not, everyone will be wondering where their delicious cookies are the next holiday. Believe me, this has happened as well as being told these are the best tasting huge cookies just about anyone who tries them will want the recipe if you do not make them for them.
Chocolate Chip Cookie Ingredients
- 2 - cups shortening, you can use half shortening and half margarine or simply use butter flavor Crisco
- 3 - cups white sugar
- 1 - cup brown sugar
- 4 - eggs
- 4 - teaspoon vanilla extract
- 8 - cups self-rising flour
- 4 - teaspoons baking soda
- 2 - cups grounded pecans
- 12 - ounces of chocolate chips or more if you like
Cream you shortening, white sugar and brown sugar and then add one egg at a time while beating well with a mixer. Add the vanilla and mix well.
In a separate bowl you will sift together the flour and baking soda. You will then stir this dry mixture into the creamy wet cookie dough batter and mix well. Next you will stir in the chocolate chips and the pecans.
If the dough seems a bit too dry simply add a few teaspoons of milk into the batter to moisten.
You will then use a little less than a ¼ cup of cookie dough to arrange on your cookie sheet for baking. Understand that these cookies will rise and spread, therefore you should place the cookies apart enough to allow for this.
You will have already preheated your oven to 325 degrees for baking your cookies. Place your cookie sheet of cookies into the oven and bake for approximately 8 minutes and then remove them from the oven before they are completely done and allow them to cool.
Note: you can leave out the chocolate chips and replace them with peanut butter baking chips or you can leave either type of baking chip out and make pecan cookies as well.
Peanut Butter Cookie Variation
- Decrease vanilla to 2 - teaspoons
- Decrease flour to 6 - cups
- Decrease soda to 2 - teaspoons
- Add 2 - cups peanut butter
During the holiday season as well as any day, stay safe and enjoy!
