As I have done for the past several years, I have grown a vegetable and fruit garden. Being that we have had a very unusual summer weather wise, the garden was not as “fruitful” as in past years. But I do seem to have ample tomatoes, some peppers, watermelon, cantaloupe, strawberries and raspberries. However, one of my biggest providers (and I do mean biggest) was my zucchini. Two of my crop was probably at least 2 feet long and beautiful. I was amazed! Then my neighbor brought over another zucchini was just as big.
There are more benefits to the zucchini than most of us realize. The zucchini is a summer squash and botanically considered a fruit. The benefits of this great fruit/vegetable is full of vitamin C, a powerful antioxidant, the rind contains beta-carotene with many antioxidant properties, is 95% water, is a good source of vitamin B6, riboflavin, manganese and a lot of other nutrients, and very low in calories. A full medium size zucchini has only 25 calories.
I know many people love to make zucchini bread, and so do I; however, being on the dieting spree and currently on weight watchers, I was looking to be able to use my large “fruit” in a new and delicious way, fast, easy and a main lunch course. I hope that you may enjoy this new recipe’ as much as I did. It really is great and you can find your own little variations, should you like to.
1 Medium Zucchini
Pam Butter Spray
½ cup spaghetti sauce (jar or homemade)
Spray butter
1 oz. mozzarella cheese
I wanted to share with you a brand new recipe’ I just found today by accident. I am currently on weight watchers and was looking for a good easy lo cal recipe’ . . . and with a huge zucchini in my garden, I got this idea how to prepare . . . and it was absolutely delicious.
Wash your zucchini and slice in round thin slices, about ½” thick. There is no need to peel. Spray your large fry pan with Pam Butter Cooking Spray. Arrange in a single layer in the pan and spray the zucchini with spray butter. Fry until slightly golden brown and flip your zucchini over. On each piece of zucchini put about a teaspoon full of spaghetti sauce. When done putting sauce on all of the pieces, sprinkle the cheese on top and cover your pan. Cook for about another 2 minutes and serve.
