How to keep salad fresh for a week

My mother-in-law gave me a great tip today that I told her she should share here on Factoidz. Being the most hyper active 70 year old you ever met, seriously, this kid should pop a Ritalin with her Geritol…She can’t sit still long enough to compose a 400 word article and share the ton of information she has picked up in nearly a century of doing a million things –sometimes all at once. She gave it a try, fell short on the word count and moved on to different things like a humming bird. So, I’ll pass on what she is willing to share verbally. No shortage there! I asked if I could hang a tape recorder around her neck for a few hours. Once I transcribed and posted it all, I could make Factoidz Guru.

This is what she had to say about salad:

I make my salad for me and your father-in-law all at once, for the entire week. I buy the mixed salad lettuce that comes ready to go in a bag, except when the lettuce I grow in the garden is ready. I like the stuff that comes with shredded carrots too. Don’t leave any in the bag. It doesn’t last and will get brown and slimy soon after it’s opened. I slice up Vidalia onions and throw them in. Of course you have to have tomatoes. But…DON”T slice up the big ones and put them in. It will make the whole thing soggy and bad in no time. Use cherry tomatoes. I always grow a bunch of those too. Or, I like the smaller grape tomatoes too sometimes.

I fill a two gallon Tupperware bowl about ¾ leaving about a two inch space at the top. Here is the trick that keeps it all fresh, dry and crispy for a long time: I take some paper towel, about three sheets worth, and pat it down on the top of the salad before I put the cover on the bowl, and stick it in the fridge. I heard that if you put a table spoon of lemon juice over the salad and shake it up, that will also help it from browning, but I never tried that. This way works just fine, and we try to have salad with every meal…It’s healthy, and all gone in a week or less. We both lead very healthy life-styles, all this energy is fueled by really good, healthy food.

I keep some Fetta cheese and shredded Swiss in separate containers. I like some of that on my salad too, but your father-in-law doesn’t, so that’s the reason I don’t just put that in ahead of time, but I guess you could if you wanted to. If we have them, I like to put cucumbers in just before I eat it too. I don’t think they will last a week like the rest of it, and they’re not a favorite of ours anyway.

Well! I'll be dipped! I use the bagged salad too. I always use a bread tie to keep it fresh, and it does okay for a few days, but then, like you say it turns bad. I've put salad in bowls before, but not with the paper towel. I'll have to do that from now on. Thanks so much for the tip!

I've got a bag of lettuce in the frig right now that is getting older, slicker each day. I have almost stopped buying the pre-cut stuff because it is expensive and I always end up throwing it away eventually. I can't wait to try this approach. Mom will be glad I'm eating my vegetables again!
