How to Make Low Carb Tuna Patties

I have made Tuna patties for my family  for many years  and find that children  seem to like "Tuna" patties a little better than salmon. This patty tastes great by itself of as a part of a whole meal served with cold macaroni salad, rice with tomatoes or in a sandwich with a slice of cheese melted on top. Ideal as a quick snack and easily heated in a microwave to eat the next day, this recipe is versatile!

Ingredients

* 2 cans of Tuna (5 oz. )

* 2 Whole eggs

* 1/4 cup finely chopped onion

* 1/2 cup soy flour

* 2 tablespoons of Parsley

* 2-3 tablespoons of Parmesan cheese

* 1/2 teaspoon seasoned salt

* 1/2 teaspoon lemon pepper

* Dash of Garlic Powder

* Dash of Paprika

* 2-4 tablespoons of Extra Virgin Olive Oil

Step 1

In a large bowl combine canned tuna fish, eggs, finely chopped onions, soy flour, parmesan cheese, parsley, seasoned salt, lemon pepper, garlic powder, and paprika,  give all of these ingredients  a good stir just until well blended.  I usually like to stir a little as I add ingredients to insure that all things are well incorporated together. Usually once you add the flour you will need to pause and stir well. Soy flour is readily available in most larger grocery stores and also easily purchased online at stores specializing in low carb foods.

Heat a large skillet , heat your Extra Virgin Olive Oil, your pan is hot and ready once  a drop of water starts to sizzle when added to the pan. If this occurs you are ready to start cooking your patties. You may need to drop the temperature a bit. A good heavy iron skillet is idea for making these patties, but also non stick is a great route to go as well.

Step 2

Using a soup ladle or a large spoon scoop out your tuna mixture and cook on one side until patty moves around in the pan freely. Turn over and repeat the process cooking for additional few minutes. Patty is ready when it no longer expels raw batter when pressed with a spatula and is firm.

Step 3

Place cooked patties on a plate lined with paper towels to drain and add seasoned salt to them the minute the come out of the frying pan. Patties should be golden brown in color.  Remember, this dish can also have the tuna substituted with salmon and for those not on a low carb diet you can substitute the soy flour for regular all purpose flour.
