Are you looking for some great family recipes to add to your collection, recipes not only delicious and healthy but oh so easy. Seems like most people thoroughly enjoy a good meatloaf. If you want to have an easy meatloaf that the whole family will love, this is one of those recipes . . . and I hope you really enjoy it.
• 3 lbs. lean gr. beef
• packet of onion soup mix
• 1/2 green pepper, diced
• 1/2 onion, diced,
• 1 egg
• 2tbsp. bread crumbs
• 1 tbsp catsup
• 1tsp mustard
• 1 cup rice (optional)
• brown gravy mix
Preheat your oven to 400 degrees. I try to start out with good lean beef, no less than 80% lean, trying to be as healthy as possible. Some people do like to add about a half pound of ground pork to give it a little better flavor. Once you get all your ingredients (except the gravy mix) together, (silly as it may sound) I put on some surgical gloves to mix my meat. I personally like to get my hands in there to mix it well but don’t want the beef under my fingernails. Mix all your ingredients very well to get all them well blended. Of course, I mentioned rice as an option, which is great. If you like that option, use a cup of par-cooked rice and again mix well. You don’t want to use raw rice because won’t cook well but if it is par cooked, it will finish cooking in the meatloaf and it is fabulous.
Once all mixed, I put my mix directly into the pan and shape my meatloaf. My trick thereafter is to put in the oven below the broiler and broil until meat starts browning on the top. It seals in the flavors. Mix your gravy mix and water together and pour in the pan around your meatloaf, cover and bake for 90 minutes.
You can then open the lid and skim any excess fat. At this point you may want to add vegetables to complete your meal, such as potatoes, carrots, whatever you like and continue baking until your veggies are tender. This can be served as is a complete meal in a pan or make rice or mashed potatoes on the side to go with your gravy. Meatloaf is a good old standby that you know your family will love.
