Making a Diet Soda Cake: Save time and calories

You may be trying to save on calories, or perhaps it is minutes your conserving, either way DIET SODA CAKE may be the answer for you. I was first introduced to a recipe that combined two of my favorite things, Diet Coke and cake, when I was in a weight-watching group. Mentally it did not sound that appealing but my current diet didn’t allow full fat cakes so I was willing to try this as an alternative – I am glad I did.

The recipe is simple, one cake mix (flavor of your choice) plus one can diet soda (flavor of your choice) – mix and bake as directed. I have never added any additional ingredients like butter, oil or eggs. The batter tends to be a bit thicker than the traditional cake batter but in my opinion the end product taste just as good as a traditional cake.

By eliminating eggs and oil you really reduce the fat content of the cake and most diet sodas have zero calories to add to the cake mix. Once you get daring and try it I am sure you will be amazed at the result. My first cake was a diet coke and yellow cake mix combination. Many people in my group used a diet lemon-lime soda and a yellow or white cake mix. They combinations are endless. For something different you may want to experiment with diet orange or diet root beer. Like anything, the results will be at the mercy of personal taste.

I would also like to suggest PUMPKIN CAKE, another two-ingredient wonder. This recipe uses 1 can of pumpkin puree and 1 cake mix. This cake turns out very moist and again by eliminating fats and eggs your really scale down the calorie and fat counts. Despite its name it does not carry much of a pumpkin flavor, it really just taste like a yellow cake.

I hope you will give the diet soda or pumpkin cake a try. It is a snap to make and uses only one bowl, a real time saver. Happy baking!

DIET SODA CAKE

  • 1 Can diet soda of your choice
  • 1 Box cake mix of your choice

Mix the two-ingredients together in a mixing bowl. Pour into a greased cake pan and bake as directed for the size cake pan your using.

  • 1 Can pumpkin puree
  • 1 Box cake mix of your choice

Another one for my wife. She loves to bake but I'm not a sweets person so she usually ends up eating what she doesn't give the grandkids. The grand kids live 25-miles away so she ends up eating most of her baked goods. The problem with that is she needs to lose weight and she's also diabetic so she doesn't need the sugar. Thanks Jenn.
