My Favorite Homemade Pies for the Holidays: Breakfast and Coconut Cream Pies

Holiday time is a fun and festive time. You want the taste of homemade. What you don’t want is to spend hours in the kitchen accomplishing that. Here are my favorite homemade pies that are quick and easy. I will say you can cheat on the pie crust and purchase the frozen deep dish and it tastes just as good. The rest is a few simple ingredients that will take you no time to prepare.

Basic Pie Crust

  • 2 cups all-purpose flour
  • 3/4 cup Crisco lard butter flavor
  • 1 teaspoon salt
  • 7 tablespoons water
  • Optional/ light brown sugar

Preparation:

  1. Mix the flour and salt together. Add the Crisco and press with a fork. Add water and continue to press, It will ball up.  If it is still falling apart add a little more water to get it to roll into one big ball. Sprinkle or dust with brown sugar, wrap in plastic. Refrigerate for 30 minutes.
  2. Cut in half for one pie. Take wax paper and dust with flour, roll your ball out with a rolling pin. If dough sticks add more flour to your pin, hands and wax paper. (Make sure your wax paper is large enough to accommodate the rolled out dough.)
  3. Once you get the dough rolled out to fit your pie pan place it in the pan by flipping keeping your hand under the wax paper for easy removal.
  4. Fit your dough to the pan using your fingers to shape and flatten the sides to the pie plate. Use a knife to trim and then pinch the edges.

Breakfast Pie

Ingredients

  • 3 eggs
  • ½ cup of milk
  • 1 cup of your favorite sausage, cooked and crumbled
  • 1/3 cup of mild cheddar cheese
  • 1 prepared pie crust

Directions

  1. Preheat the oven to 350 degrees
  2. In a bowl whisk eggs and milk together. In the pie crust pour sausage and sprinkle cheddar cheese.
  3. Pour in egg-milk mixture and top with remaining cheese. Place in oven for 25 minutes and serve hot out of the oven. Do not over fill. Makes 6 servings.  Optional:  Add sour cream for topping.

Coconut Custard Pie

Ingredients

  • 3 eggs
  • ¼ cup of sugar
  • 1 cup of fine shredded coconut
  • 1 cup of Evaporated Milk
  • 1 prepared pie crust

Directions

  1. Preheat the oven to 350 degrees
  2. Combine eggs ,sugar, and milk together in a bowl. Add sugar to taste if not sweet enough.
  3. Pour into pie shell. Add coconut to the top and gently press down. Do not overfill.
  4. Place in oven 30-35 minutes or until pie edges are lightly browned.  Cool and serve
