Aunt Christeen’s Meat Loaf
1 1/2 lb. ground beef
1-cup tomato juice
3/4 cup uncooked oatmeal
1 egg - beaten
1/4 cup chopped onion
Salt & pepper
Preheat oven @ 350.
Combine all ingredients.
Mix well.
Press firmly into un-greased loaf pan.
Bake for 1 hour.
Let stand, 5 minutes, before slicing.
Makes 8 Servings.

Granny’s Ham Casserole
2 cups cooked noodles
1 can cream of mushroom soup
1 1/2 cup chopped ham
1/2 cup chopped onions
1 cup grated cheese
1/3 cup sweet milk
1/2 stick margarine
Melt margarine in casserole dish.
Combine all of the ingredients and pour melted margarine over all, except cheese.
Pour mixture onto the casserole dish.
Sprinkle with cheese.
Bake @ 350 for 30 minutes.

If you have a hankering for something sweet and need to satisfy a sweet tooth, you may want to try these recipes as well.
Daddy’s Fudge
2/3 cup cocoa
3 cups sugar
1 1/2 cups water or milk
1 tsp. salt
Cook in skillet, and then add
1 stick butter
1 tsp. vanilla
*optional: pecans, marshmallows
* My dad loved this stuff, when a sweet tooth went to talking to him.
We loved it too. Try it!

Blackberry Cobbler
1-cup flour
1-cup sugar
1-cup milk
Blackberries
Mix flour, sugar, milk together.
Pour into a buttered pan.
Pour Blackberries on top of the mix in the pan, the blueberries will sink down into the batter.
Bake for, hmmmm…till done.
(Keep an eye on it, I want to say about 30 minutes, but I’m not going to swear to it.)
This recipe can be useful for other types of fruit as well, like peach, pear, strawberry and others.
It is quick and easy, especially when you are short on time and ingredients.
The kids love it and so do most guys, give it a try.

‘Unbelievably Easy’ Peanut Butter Cookies
1-cup peanut butter
1-cup white sugar
1 tsp vanilla
1 egg (beat in bowl)
Mix peanut butter, white sugar, & vanilla.
Add beaten egg.
Mix well & drop by teaspoonful on a dry cookie sheet.
Bake at 325, for 13 min
Let cool.
These are really good, especially when you are short on time and ingredients for making other cookies and the kids love them.

Granny’s Rice Pudding
1/2 cup flour
1 cup sugar
Mix together
3 eggs
Mix
1/2 cup milk
Mix
11/2 cup cooked rice
1 cup raisins
1 tsp. vanilla
1 tsp. cinnamon
Mix well.
Bake @ 350 till golden brown.
