Today I will share a recipe for a wonderful Smoked Salmon Spread, that is a simple and perfect answer for any occasion! I have served this tasty Salmon Spread as a appetizer on Melba Toast, as a Dip, as a Veggie Stuffing, as a Cheese Ball, and even used it on Bagels as a Quick Breakfast.
I have served it as a passed hors d’oeuvre on Melba Toast garnished with Salmon Caviar www.olivenation.com . This is a Website I use often they offer great product.
As a Dip I replace one 8oz package of the Cream Cheese www.creamcheese.com with 12oz of Sour Cream www.daisybrand.com .
- The Basic Recipe:
- 2 packages 8oz each Philly Cream Cheese softened
- 8 Green Onions chopped
- 1/2 small Red bell Pepper diced fine
- 1/2 tsp crushed Garlic
- 2 tsp fresh lemon zest
- 1/2 tsp cracked Black pepper
- 3 heaping Tbs Capers packed in sherry www.rolandfood.com
- One 4oz package Cajun flavor Echo Falls Smoked Salmon www.yummy.com
- I like to mix it with a spoon so as not to break the salmon up to much, but if you will pipe it out of a bag mix it up in your Cuisinart food processor www.cuisinart.com
As a Stuffing for Celery Sticks or Mini-Tomatoes, I blend the Spread smooth so as it will pipe out of a bag better, and sometimes garnish with toasted Almond slices www.bluediamond.com .
My wine selections for this recipe are "Louis Latour, Puligny Montrachet" or a "Robert Mondavi, Fume Blanc"

Now I will turn you on to my mothers Famous Cheese Log, "Big Ann " served this cheese log at many a function over the years with great success! Besides being a simple recipe this is one of the best recipes I ever got from my mother, its been closely guarded for years but now I want to share it with the world in her memory……All you need is a big bowl to mix it in a piece of wax paper to chill it in and a knife to cut it with so it fits on the cracker…LOL!
- 8oz Monterey Jack Cheese, 16oz Sharp Cheddar Cheese shredded www.shopcabot.com

- 1/2 cup chopped pecans or walnuts toasted www.bluediamond.com

- 2 tsp Garlic Powder
- 1 tsp black pepper
- 4 Green Onions minced
- mix it up and form into a log on the wax paper then dust with Chile Powder, I like the Ancho Chile Powder for a bit of kick! Chill for 2 hours and serve! www.worldspiceblends.com
I love this Cheese Log anytime it is great with Summer Sausage, and I always serve it with Carrs Water Crackers www.carrs-online.com. A perfect wine selection is a "Dry Creek, Merlot" or if you like a white wine try a "Rutherford Ranch, Chardonnay". Both are a great choice ! I also like it with a Dark Beer when served with Rye Crisp…..FANTASTIC!
