Here is a recipe for a quick, healthy and cheap winter soup your whole family will enjoy!
Turkey Chickpea Soup
- 1 pound lean ground turkey
- 1 can chic peas
- 1 large onion
- 4 cloves of garlic
- 1 pound of a small size pasta (ditali or elbows)
- 3 boxes of chicken broth
- 2 teaspoons of rosemary
- Salt & Pepper to taste
Directions
- Saute roughly chopped onion in a few teaspoons of olive oil until translucent.
- Add chopped garlic and saute for another two minutes.
- Add whole can of chic peas.
- Add ground turkey and saute until well done.
- Add chicken broth, rosemary and salt and pepper. Bring to a boil and add pasta. Cook until pasta is aldente then turn off and let sit for five minutes. Serve with grated cheese.
If you keep a bag of frozen chopped onions in the freezer and chopped jarred garlic in the fridge this recipe can be prepared in 10 minutes and be ready in less then 30! You can have a good home cooked meal for your family even on those days you come home from the office late.
