I am the first one to admit that I am not the best baker in the world, but I love to cook so in my search for EZ bread recipes, these are two that I found that even a monkey could make. They are tasty and oh so yummy! I like to serve these warm with butter fresh out of the oven after cooling to the touch. You can’t beat these for ease. All you guys out there want to impress your wife or girlfriend try these on for size. They can’t be beat!
Grandma’s Banana or Zucchini Nut Bread (By Betty Crocker)
- 1 C sugar
- 1/3 C butter or shortening
- 2 eggs
- 1 ½ C mashed bananas or fine shredded zucchini
- 1/3 C water
- 1 2/3 C all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ¼ tsp baking powder
- ½ C chopped walnuts
Grease bottom of loaf pan. Preheat oven to 350 degrees. Mix sugar and butter or shortening, stir in eggs. Add bananas or zucchini an water, mix well. Stir in all ingredients until moist. Pour into pan. Bake until tooth pick poked in center comes out clean about 55 to 60 minutes.
Serve warm with butter and sprinkle some powdered sugar over the top.
Hannah’s Sunbeam Bread (By Huckleberry Hannah’s)
- 2 TBS yeast
- ¼ C lukewarm water
- ½ tsp sugar
Dissolve together and set aside to activate
- 1/3 C sugar
- 1C powdered milk
- 2 C warm water
- ½ C shortening
- 1 tsp salt
- 3 eggs (beat slightly)
- 4-5 C flour (mix to proper consistency may not need all 5 C)
- Butter
Combo shortening, water, milk, sugar and salt. Stir to melt and dissolve ingredients. Add eggs and stir to blend. Add 2 C flour. Stir and add yeast mix. Stir. Add 2 more C flour and stir to blend lightly. Turn onto floured board and knead lightly until dough is no longer sticky to the touch but not dry, if still too moist add more of the remaining C flour. Return to bowl. Cover with a towel and set aside in a warm (not hot) place to rise. When twice it’s original size, form into loaves or rolls. Place in baking pans and let rise again to twice their size. Bake at 350 degrees-10-15 minutes for rolls and 30-40 minutes for loaves. Turn out of pans immediately brush tops with butter. Place loaves on their side on a cooling rack.
