Vegetable Side Dishes Worthy of Thanksgiving Dinner

Tired of the same old green bean casserole on Thanksgiving Day? Would you like a recipe for a green bean side dish that you can cook right on the stove top that is easy to fix and has a nice kick to it.  The flavors of this Spanish inspired green bean dish go really well with turkey and will be a welcomed change it is also a bit more filling because there is a bit of starch involved as well as this recipe is made with rice. 

Spanish Inspired Green Bean Side Dish

Start with 1/2 cup of cooked rice cooked however you like with a rice cooker or on the stove top.  The rice can be cooked the day before to save time on Thanksgiving.

2 tablespoons butter or margarine

1 large onion thinly sliced

1 lb can of tomatoes in juice

pinch of pepper

1 teaspoon salt

1 dash of tabasco sauce

1 pinch of cumin

1/3 cup water

Optional: One small diced jalapeno

In a large frying pan melt the butter and saute the onions until they are soft. Gently mash up the tomatoes in the can with a fork just a bit before adding them to the pan. If you don’t like large chunks of tomatoes pull the tomatoes out of the can place them on a cutting board and give them a good chop, be careful not to spill the sauce. Place the tomatoes and the sauce in to the frying pan. Add the pepper, salt, tabasco, cumin, and water. Stir together, then add in the rice and green beans and heat through until everything is hot. Then place in a covered casserole dish until ready to serve or serve immediately.

Optional: Garnish with thin slices of green peppers.

Have you ever considered cooking cabbage on Thanksgiving Day?  Cabbage goes very nicely with both turkey and ham.  So cabbage is a natural compliment to Thanksgiving dinner.  Here is a casserole that will have seriously considering cooking cabbage for Thanksgiving dinner this year. 

Cheesy Rice Cabbage Casserole

1 head of cabbage cored and boiled until just beginning to soften.  Add a bit of salt to the cooking water.

2 cups of cooked rice (rice can be made the day before to save time)

1 pinch of red pepper flakes

1 pinch black pepper

1/3 cup of milk

1 10 1/2 oz can of cream of chicken soup

1 cup grated sharp cheddar

Using a glass (Pyrex) baking pan, spray the pan with non stick cooking spray.  Take the rice and create a crust around the baking dish and up the sides.  Lay the pieces of the cabbage on the rice.  In a small bowl mix the soup, milk, red pepper, and black pepper together by stirring gently with a spoon.  Spread the mixture over the cabbage and sprinkle the cheese over the top of the layers.  Place in a pr-heated 350 degree oven for about 30 minutes or just when the cheese begins to brown. 

Allow to cook for a few minutes before serving.  Can be cut similar to lasagna.
